The New York strip is cut from the beef short loin. The New York strip has intense flavor, with bold, beefy notes. A good New York strip should have plenty of marbling – the small white lines of fat within the meat. One of the reasons people love this steak is for its great bite and solid chew. The rich marbling inherent in this steak creates the robust flavor and a delicious eating experience. 

Please note that all our steaks are cut by hand and may vary slightly in weight. 

How to Cook

The New York Strip is often called “the ultimate griller’s steak.” We recommend grilling strips on a super-hot grill, quickly, to give the steak a great sear without overcooking. If you cook a NY strip indoors, pan-roast or reverse-sear are the best methods. No matter how you cook it, the intense marbling in this steak will melt into the meat to infuse it with the boldest flavors among any popular steak. 

Shipping & Delivery

We are proud to offer shipping nationwide. Orders will ship directly from the ranch every Tuesday using UPS 2-day Air. Orders placed after 5PM on Monday will be shipped the following Tuesday. Unfortunately, we are unable to ship to P.O. Boxes at this time. Local pickup is available within the DFW metroplex and from the ranch at no additional charge.
