This is the most tender cut of beef from the narrow front part of the tenderloin. A properly cooked filet mignon almost melts in your mouth.
Please note that all of our steaks are cut by hand and may vary slightly in weight.
How to Cook
Since the tenderloin filet is a lean, boneless cut, it cooks especially fast. Briefly sear the filet(s) in a hot oven-safe skillet (like a cast-iron pan) until a brown crust forms, about two minutes per side, then transfer it to the oven for a few minutes to finish cooking. (Alternatively, skip the oven and simply pan-fry the filet(s) in a skillet over high heat, about three to eight minutes per side.)

We are proud to offer shipping nationwide. Orders will ship directly from the ranch every Tuesday using UPS 2-day Air. Orders placed after 5PM on Monday will be shipped the following Tuesday. Unfortunately, we are unable to ship to P.O. Boxes at this time. Local pickup is available within the DFW metroplex and from the ranch at no additional charge.
