The skirt steak is cut from the short plate of the beef plate primal cut, located just below the ribs. There are two types of skirt steak cuts: outside and inside. Skirt steak has a similar beefy flavor as flank steak.
Please note that all of our steaks are cut by hand and may vary slightly in weight.
How to Cook
Skirt steak is thin steak, so it will cook quickly and evenly. Skirt steak is popular for high-heat cooking, such as carne asada, and fajitas, and should always be sliced against the grain. Because of its looser structure, skirt steaks are excellent at absorbing flavors and marinades. As a general rule, once both sides are browned, the interior is likely cooked to medium-rare.

We are proud to offer shipping nationwide. Orders will ship directly from the ranch every Tuesday using UPS 2-day Air. Orders placed after 5PM on Monday will be shipped the following Tuesday. Unfortunately, we are unable to ship to P.O. Boxes at this time. Local pickup is available within the DFW metroplex and from the ranch at no additional charge.
