The brisket comes from the lower chest of the animal, located just below the shoulder. Brisket is full of connective tissue and fat, making it a perfect choice for “low and slow” styles of cooking. This cut is famously smoked for barbeque in the South but, is also excellent for braising or to be made into corned beef or pastrami.
Our briskets are cut by hand and range from 10-12lbs in weight.
